No cook clotted cream

2 cups unpasteurized cream

Refrigerate cream for 2 hours.
Place strainer on a bowl.
Line strainer with coffee filter.
Pour cream into filter.
Let sit, whey will pass through into bowl.
Scrape thickening cream off sides into center.
Allow whey to seap out again and continue till reaches consistency of soft cream cheese.
