Pound Cake Recipes
My favorite of all the 'best pound cake recipes' that I have tried, including flavored ones, is my mom's recipe hands down. Of all easy desserts, this one takes the cake (pun intended ;-)) and will not let you down.
It is easy because if you choose, you do not need to do anything with it. It is DELISH served just as it is, but I will give you a few ideas of how to serve it on your tea party menu.
The Best Pound Cake Recipe
2 sticks butter (no substitutions!)
1/2 c shortening
3 c sugar
Cream the above 3 ingredients until they are light and fluffy. This is an important step.
6 eggs, adding one at a time and mix well between additions
1/2 tsp butter flavoring
1 tsp vanilla
Add flavorings after the eggs and mix.
3 c flour
1 c milk
Mix in a bit of flour and milk, alternate and beat after each addition.
Bake in a greased Bunt pan 1 hour and 15 minutes in a 350* oven or until toothpick comes out clean.
There is a lot of batter, but don't worry, it will not over-flow your pan if you are using a normal sized Bunt pan.
It is optional to divide the batter in half and bake in loaf pans or fill muffin tins 2/3 full. I have never used mini muffin tins for this pound cake, but I bet they would turn out fabulous.
Adjust baking time accordingly. I would start checking loaf pans at about 40-50 minutes, and muffins at about 20-25 minutes.
Lemon or Plain Glaze for Pound Cake
1 c powdered sugar
2-3 T lemon juice
Mix well and then drizzle on cooled cake.
To make a plain glaze, substitute water or milk for the lemon juice.
Add enough liquid that the glaze pours easily. Pour out over cooled cake in a fine drizzle either directly from your container, or if you are having trouble getting it to 'drizzle', then dip a spoon in the glaze and then let it drip off the tip of the spoon as you move it back and forth across your cake.
